“Beet” boring side dishes and boost your health, to boot. This picture-perfect sweet beet also has very attractive deep reddish-purple leaves. Beets fuel your energy and are a natural blood thinner. Baby beet greens (along with steamed/cooled beets) are a delight in summer salads. The pretty pink interior rings make beautiful pickled beets, or simply roast them to get their full flavor.
