Description
Nearly impossible to find in grocery stores. The wine-colored, flattened globes are 1" tall by 2"–3" across. Their sweet-yet-robust flavor shines in fresh or cooked dishes — perfect for roasting, grilled kebabs, pickling or thinly sliced on a good sandwich. Harvest when tops fall over. Dry in the sun for 2 days, then cure out of the sun in a dry area for 5 days. Once dry, cut the roots to 1/4", and the greens to 1" to create a seal, preventing decay. Store in mesh bags in a cool, dry place for best storage results. Intermediate day.
