Ratatouille is a traditional French dish of stewed vegetables, often served as a side dish or as a main course with rice, pasta, or bread. It is usually sautéed, layered in a casserole dish, and baked or simply sautéed and served straight from the skillet. Preparation Time: 25 minutes Cooking Time: 50 minutes Yield: 8 servingsYou Need:
- 3 tablespoons olive oil
- 1 large onion, sliced
- 4 garlic cloves
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- ½ teaspoon ground allspice
- ¼ teaspoon ground black pepper
- 2 bell peppers, sliced
- 2 medium-size zucchini, sliced
- 6 ripe tomatoes, quartered
- 2 medium-size apples (Rome Beauty, Granny Smith, Northern Spy), diced
Directions:
- Heat the olive oil in a large skillet and add the onion. Crush the garlic directly into the skillet and sauté for 5 minutes.
- Into the skillet, sprinkle the basil, oregano, allspice, and black pepper.
- Stir the bell peppers into the onions, and sauté for 10 minutes.
- Add the zucchini and the tomatoes to the skillet. Stir, cover, and simmer for 20 minutes.
- Add the apples to the ratatouille, cover, and simmer for 15 minutes. Serve hot.
